Aaron Franklin Method Spare Ribs

This week I wanted to try smoking spare ribs according to Aaron Franklin's method. Overall, I enjoyed these ribs, but I prefer a little more bite to the meat than what these have to offer. If you are looking for Fall-off-the-bone ribs these are the ribs for you.
Ingredients
1 rack of full spare ribs
SPG Rub
Killer Hogs Hot BBQ Rub
Favorite BBQ Sauce
Apple Cider Vinegar
1. Trim and season the ribs. To trim the ribs remove the breastbone and the skirt meat on the bottom of the ribs. Most people remove the membrane, but Aaron doesn't, so for this method, I left it on. Apply a base layer of SPG(salt, pepper, and garlic) rub, followed by a top layer of your favorite Rib rub. For mine, I used Killer Hogs Hot BBQ Rub.

2. Place ribs in the smoker at 250 degrees for 2.5 hours.
3. Mix your favorite BBQ sauce with Apple Cider Vinegar 50-50 to dilute it.
4. After 2.5 hours put a layer of your diluted sauce on the top layer of the ribs. Let the sauce set for 15 minutes, flip the ribs over and do the same for the other side.

5. After 3 hours wrap the ribs in foil. Lay down a layer of foil, and put a layer of BBQ sauce on the foil to lay the meat in. Place ribs meat side down in the foil and wrap tightly.

6.Return ribs to the smoker for about 1.5-2 hours. After 1.5 to 2 hours start checking for doneness. To do so you can pick them up and feel how it bends in your hands. If it feels too tight they aren't done yet, you want to feel them bend while maintaining the integrity of the ribs. I ended up pulling mine off after about 1.5 hours.
7. Let rest for 30-45 minutes
8. Unwrap, slice, and serve.


I really enjoyed these ribs. They were extremely tender, and the flavor from the sauce and vinegar was well balanced. This is an easy delicious way to make spare ribs. I hope you enjoy and remember Keep Smokin'
