Poor Man's Burnt Ends

Today, I want to share with you how I make Poor Man's Burnt Ends. First, what are Burnt Ends? Burnt Ends are traditionally made from the point of a brisket, and are a BBQ delicacy. However, sometimes you want Burnt Ends without making a whole brisket. This is where Poor Man's Burnt Ends shine. Instead of using the point of a brisket, they are made using chuck roast. This is how I do it.


Ingredients:

2-3 Pound Chuck Roast

SPG Powder(or your favorite beef rub)

3/4 cup BBQ Sauce

1/2 cup brown sugar

3/4 cup beef broth


1. Season the chuck roast liberally with SPG(salt, pepper, garlic powder) and let sit in the refrigerator for an hour.



2. Set grill to 250-275 degrees. Smoke the chuck roast until an internal temp of 165 degrees. This took me about 2 hours.

3. After it reaches an IT of 165 it's time to wrap the roast. Use two layers of Aluminum foil and pour 3/4 cup beef broth over the roast. Wrap and return to the smoker.


4. Continue smoking until an internal temperature of 195 degrees.

5. Take roast off the smoker, and let rest for 20-30 minutes. Then slice into 1 inch cubes.


6. Place the cubed roast into an aluminum pan. Sprinkle with brown sugar and toss with your favorite BBQ Sauce.






7. Cover the pan and return to smoker for 2 hours. After 2 hours, you should have delicious meat candy, Poor Man's Burnt Ends.
